INGREDIENTS (4 people):- 1 turkey
- 1 eggplant
- 1 zucchini
- Branch tomatoes
- 2 cloves of garlic
- 1/2 glass of vinegar
- 1 glass of water
- Aromatic herbs (thyme, rosemary and oregano ...)
- Extra olive oil
Put the turkey quarters on a baking sheet. In a mortar, crush 2 cloves of garlic, salt, parsley and a teaspoon of oregano. Add a part of vinegar and 2 of water. Pour this mixture over the turkey. Enter in the oven for 90 min, first at 200º C and then lower to 170º C.
Cut the eggplant, zucchini and sliced tomatoes of a similar thickness, about 1 cm. Place the slices in a bowl and sprinkle with herbs. Skewer on wooden sticks of skewers.
Stick the skewers in the oven and keep at 170º C for 60 minutes. Ideally, do this step when the turkey takes 30 minutes of roasting. Remove and serve the turkey with the vegetable skewers.
