Endive and cheese cake

Endive and cheese cake

Easy Difficulty Time: 45 min.

INGREDIENTS (4 people):
- 6 endives
- 40 g of butter
- 80 g goat cheese
- 2 dl of cider
- 200 g of puff pastry
- Brown sugar
- 1 teaspoon of fennel in grain
- 1 tablespoon of rosemary
- Salt
- Pepper

Preheat the oven to 180º C, with heat up and down. Cut the endives in half, remove the trunk and cut into fine julienne. Undo the butter in a pan, add the endives and saute. Add the cider to the pan. Cook over moderate heat until the liquid evaporates. Perfume with ground seeds, rosemary, salt and pepper.

Spread the puff pastry plate on the baking sheet covered with vegetable paper. Bake for 10 minutes.

Spread the endives on the puff pastry and some cheese on top. Cover with strips of puff pastry and sprinkle with brown sugar. Put the tray in the oven, at medium height, and bake 10-15 minutes, until golden brown. Let cool on the rack.

Trick: It includes a handful of nuts in the puff pastry filling: they are rich in Omega 3, which helps lower our cholesterol and prevent poor circulation.

Quinoa bread with spinach

Quinoa bread with spinach

Easy Difficulty Time: +60 min.

INGREDIENTS (4 people):- 150 g quinoa
- 150 g whole wheat flour
- 15 g of yeast
- 400 g spinach
- 3 tomatoes
- 1 onion
- 1 garlic
- 1 tablespoon coconut oil
- Salt
- Pepper

Preheat oven 180º C. Put the quinoa and wheat flour in a bowl. Add a little salt, crumbled fresh yeast and 1.8 dl of cold water. Mix with a spoon and knead for at least 5 minutes. Cover the dough with a cloth and let stand in a bowl for about 60 minutes.

Deflate dough with your fist and divide into 4 balls of the same size. Spread each ball with the help of a roller to form 4 discs of about 20 cm in diameter. Bake in preheated oven and cook 15 minutes. After that time, turn off the oven and take out the bread.

Poke the onion and garlic in a pan with coconut oil, until the first one is tender and translucent, without burning. Add the chopped tomato, spinach, salt and pepper. Cook 10 minutes. Serve the spinach over the quinoa breads.

Easy Difficulty Time: +60 min.

INGREDIENTS (4 people):- 2 red onions
- 12 radishes
- 12 mullets
- 80 g romesco sauce
- 20 g of mustard in grain
- 2 dl of cider vinegar
- 1 teaspoon brown sugar
- Salt

Peel and cut the onions red in quarters. Cut the radishes into quarters. Put a medium bowl with 2 dl of cider vinegar, 1 dl of water, mustard and brown sugar. Stir and add the radishes and onion. Leave in the fridge for 2 hours approx.

Clean each mullet removing heads, skins and thorns. Remove two fillets from each mullet and cut each one in half. Salt very lightly. Put each fish loin on a piece of sulfurized paper and paint with the romesco sauce.

Fold the sulfurized paper on the spread mullet of romesco. Put an iron on the fire and cook the mullets 2 minutes on each side. Remove from the iron and remove the paper. Serve the mullets with the radish salad and pickled onion.

Fried chicken with coriander and chipotle sauce

Easy Difficulty Time: 40 min

INGREDIENTS (4 people):- 500 g chicken drumsticks
- 2 eggs
- 100 g panko
- 1 red onion
- Wine vinegar
- Fresh coriander
- 1/2 lime
- 1/2 avocado
- 1/2 teaspoon of sugar
- Olive oil
- 70 g chipotle sauce

Cut the chicken in pieces Snack and salt and pepper. Pass the chicken, first, for beaten egg and then for panko. Put a pan on the fire with olive oil and fry the chicken until it is golden and crispy. Remove the chicken pieces on absorbent paper and set aside.

Peel and cut the onion into slices. Put them in a bowl with wine vinegar and 1 dl of water. Put in a blender glass, 1/2 avocado, some coriander leaves, a tablespoon of olive oil, 2 of lime juice and 1/2 tablespoon of sugar. Shred and reserve.

Serve with a sauce base of coriander made in the previous step. Place the drained red onion rings and the breaded chicken on top. Then, water with a tablespoon of chipotle sauce lowered with a little water.

Healthier! If you want this recipe to be even healthier, don't fry the chicken. Bake at 180º C for 10 minutes.

Medium difficulty Time: +60 min.

INGREDIENTS (4 people):- 40 g pastry flour
- 2 files
- 0.3 dl of lime juice
- 0.3 dl of grape juice
- 50 g unsalted butter
- 150 g icing sugar
- Salt

Preheat the oven to 180º C. Put in the blender glass, 50 g of unsalted butter at room temperature, 150 g of icing sugar and pinch of salt. Beat well for at least 3 minutes, until the ingredients are integrated and obtain a homogeneous cream.

Add lime juice and the grape, little by little and still beating. Add the flour, in enveloping form, and continue beating until the flour is perfectly integrated into the mixture. Let the dough rest for approximately 60 minutes.

Put on a silpat(a non-stick silicone sheet) a small portion of dough so that, when extended, it forms a circle of about 8 cm. Place a slice of lime in the center of the circle. Bake the tiles for 6 minutes, until golden brown. Take out of the oven.

Ginger cocktail with whiskey and orange

Easy Difficulty Time: 30 min

INGREDIENTS (4 people):- 40 g of sugar
- 40 g brown sugar
- Vanilla extract
- 80 g ginger
- 2 dl of whiskey
- 0.5 dl of Cointreau
- 5 oranges

Cut the ginger into slices. Put a saucepan on the fire with the ginger. Add 40 g of white sugar and another 40 g of brown sugar. Add 3 dl of water. Keep the saucepan over medium heat for 20-25 minutes, until a light syrup forms. Then, remove the saucepan from the heat and strain. Add a few drops of vanilla extract to the mixture.

Make juice of 5 oranges. Put the juice of the oranges in a mixing glass or shaker, 2 dl of whiskey, 0.5 dl of Cointreau and 3 tablespoons of the ginger syrup obtained in the previous step. Shake the shaker.

Fill four tall glasses with crushed ice. Pour the ginger, whiskey and orange juice mixture over the ice. Garnish with a slice of orange and grate a little skin on top.
